Egg & Spinach Mini Muffins
Ingredients:
3 eggs
½ cup chopped spinach
¼ cup shredded cheese (optional)
Directions:
Preheat oven to 350°F (175°C).
Whisk eggs, then stir in spinach and cheese.
Pour into greased mini muffin tin. (We love this non-toxic, nonstick muffin pan)
Bake 10–12 minutes until set.
Storage: Fridge up to 5 days. (We love our Rubbermaid containers that are fridge and freezer safe.)
